The best part of making cauliflower rice vs “real” rice is that you can’t mess this up! It’s fast and simple and tastes great in any recipe. I made these with chicken curry and raita.

Lemon cauliflower rice

Ingredients

  • 1 whole Cauliflower
  • 1 Lemon
  • Curry leaves
  • Dry Red chilies
  • Mustard
  • Urad dal
  • Channa dal
  • Turmeric powder
  • Gingelly oil

Directions

  • Cut the cauliflower into florets and pulse them in a food processor.
  • In a pan heat oil and add mustard, curry leaves, red chilies, urad dal and channa dal.
  • When the dal is light brown add turmeric powder.
  • Add the cauliflower and stir fry for 5 mins
  • Add the juice of one lemon.
  • Serve hot with chips or some curry.

Ingredients

Marinade

  • Chicken thighs
  • Ginger
  • Garlic
  • Turmeric
  • Chili powder
  • Coriander jeera powder
  • Garam masala
  • Salt

Curry

  • Onion
  • Tomato
  • Cilantro
  • Ginger garlic
  • Turmeric
  • Chili powder
  • Coriander jeera powder
  • Garam masala
  • Salt
  • Oil
  • Jeera

Directions

  • Mix all the ingredients in the marinade and add chopped thighs and marinate overnight in the refrigerator.
  • Heat oil and add jeera.
  • Add ginger garlic paste. add onion and tomatoes.
  • Add all the masalas and cook them for 5 mins
  • Add the marinated chicken.
  • Cook for 15 mins
  • Remove from heat and chopped cilantro.
