Made these for a late night dessert today.



1 1⁄2 cups all-purpose flour
2 teaspoons baking powder
6 tablespoons butter
1 cup sugar
2 teaspoons vanilla
2 large egg whites
1⁄2 cup pineapple juice
1⁄2 cup milk

Upside down part:

4 tablespoons butter
6 tsp brown sugar
1 cup fresh pineapple pieces


  • Wet mixture:

    • Beat sugar and butter.
    • Add eggs, vanilla extract and beat well.
    • Add pineapple juice and milk to the wet mixture.
  • Dry Mixture:

    • In a large bowl, sift flour and baking powder; set aside.
  • Upside down part:

    • Grease muffin tin
    • sprinkle brown sugar in the bottom
    • Arrange the pineapple pieces
  • Construction:

    • Fold the wet mixes into the dry
    • Pour the batter over the arranged pineapples.
  • Bake for 15 minutes at 325°F and increase the temp to 375°F for 5 mins or until muffin is done ( i use the temperature prob test).
  • Let the muffins cool for 5 minute and flip it upside down.
