Fresh spring rolls are great for an evening snack during summer. They are very refreshing and great with sweet chill sauce.
Ingredients – L2R
- 2 ounces rice vermicelli
- 2 leaves lettuce
- 2 jalapeno
- 5 sprigs cilantro
- 1/4 cup pineapple
- 1 persian cucumber
- 2 string cheese
8 rice wrappers (8.5 inch diameter)
- Boil water in a pan and add rice vermicelli for 3 to 5 minutes, and drain.
- Reuse the same warm water in a place or bowl. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place lettuce, jalapeño, a handful of vermicelli, cilantro, pineapple, cheese and cucumber.
- Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce.
